Thought I should share this recipe with all of you. We had a party at home and most of the food we catered from out but my brother in law made this amazing salmon pate. It just vanished and so many asked for the recipe. So I thought it will be nice to share it with you. If you do try it please let me know whether it turned up well.
255g/9oz smoked salmon
110g/4oz cream cheese
2 tbsp double cream
½ lemon, juice only
2 tbsp chopped dill leaves (plus some extra dill to sprinkle over the top)
pinch of sugar
salt and freshly ground pepper
Pop all the ingredients into a blender and pulse until it has a consistency that you desire. Plenty of pepper is good but go easy on the salt, as the smoked salmon will be salty already.You can substitute lemon with lime.
